Method
Step 1: Prepare the meat mixture
Prepare the meat mixture: In a large bowl, add the minced meat along with the grated onion and garlic, yoghurt, tomato purée, paprika, cumin, oregano, and olive oil. Season generously with salt and pepper. Using clean hands, mix everything together thoroughly, working the ingredients until they are evenly distributed and the mixture becomes smooth and slightly sticky. This helps develop the texture and ensures the flavours are well combined throughout the meat.
Step 2: Form the meat sheets
Divide the meat mixture into five equal portions to ensure even cooking. Place one portion onto a large sheet of baking paper, then cover it with a second sheet to prevent sticking. Using a rolling pin, gently roll the meat out into a thin, flat sheet, working from the centre outwards. Aim for an even thickness across the whole sheet, as this will help the meat cook uniformly and create that classic döner-style texture.
Step 3: Roll the meat sheets
Carefully peel away the top layer of baking paper to expose the meat. Starting from one of the long edges, use the remaining sheet of baking paper to help guide and roll the meat in on itself, keeping it as tight and compact as possible. Take your time as you roll to ensure the log holds together well, as this will help create neat layers and a better texture once cooked.
Step 4: Bake the meat rolls
Preheat the oven to 200°C. Line a baking tray with baking paper and carefully place the rolled meat logs on top, leaving a little space between each one. Transfer the tray to the oven and bake for 20–25 minutes, or until the meat is cooked through and lightly browned on the outside. Once done, remove from the oven and allow the meat to rest briefly before shredding.
Step 5: Roast the peppers
Place the whole peppers in a baking dish and drizzle them generously with olive oil, making sure each pepper is coated evenly. Roast in the preheated oven for 20–25 minutes, turning halfway through if desired, until the peppers are tender, slightly wrinkled, and lightly charred in spots. This roasting process enhances their natural sweetness and adds a smoky depth of flavour that pairs perfectly with the kebab.
Step 6: Shred the meat
Allow the cooked meat to rest for 5 minutes, then either tear it into pieces with your hands or use two forks to finely shred it.
Step 7: Prepare the sauce

Carefully roll the wrap tightly from one end to the other, keeping all the fillings neatly inside. Once rolled, slice the wrap in half on a slight diagonal for an appealing presentation, and serve immediately while the meat is warm and the veggies are crisp.
