Method

Step 1: Marinate the lamb

Place the lamb cubes in a bowl and drizzle with olive oil. Add the crushed garlic, fresh lemon juice, and mint, then toss well to ensure the lamb is evenly coated. Cover the bowl and refrigerate for at least 2 hours to allow the flavours to infuse, or leave overnight for an even deeper, more aromatic flavour.

Step 2: Assemble the kebabs

Begin by soaking the wooden skewers in water for at least 30 minutes to prevent them from burning during cooking. Once soaked, carefully thread the marinated lamb cubes onto the skewers, alternating with slices of onion and pieces of red and green peppers for a colourful, balanced presentation. Once all ingredients are securely threaded, season generously with salt and freshly ground black pepper to taste, ensuring every bite is full of flavour.

Step 3: Prepare the Geek Salad

To prepare the Greek salad, start by finely slicing the red onion and placing it in a small bowl. Pour over the juice of one fresh lemon and season with a pinch of salt and freshly ground black pepper. Stir well and set aside to allow the onion to lightly pickle, enhancing its flavour and adding a subtle tang to the salad.

Next, slice the cucumber into half-moons, halve the cherry tomatoes, and cut the red pepper into thin strips. Combine these vegetables in a large salad bowl and drizzle with olive oil. Gently toss everything together to ensure the dressing coats all the vegetables evenly.

To finish, crumble creamy feta cheese over the top and sprinkle with dried or fresh oregano for a classic Greek touch. Give the salad one last gentle toss before serving to allow all the flavours to meld beautifully.

Step 4: Grill the lamb kebabs

Preheat your grill or barbecue to a medium-high heat. Place the prepared lamb kebabs on the grill, ensuring they are spaced evenly so they cook consistently. Grill the kebabs for 3–4 minutes on each side, turning carefully with tongs to achieve a light, appetising char while locking in the juices. Cook them to your preferred level of doneness—slightly pink in the centre for tender lamb or longer if you prefer them well done. Keep an eye on the skewers as the vegetables and meat cook at slightly different rates, basting occasionally with any remaining marinade for extra flavour and moisture. Once cooked, remove from the grill and let them rest for a few minutes before serving to allow the juices to redistribute, ensuring each bite is succulent and flavourful.

Step 6: Toast the pita bread

Toast the pita bread for just a few minutes, turning occasionally, until it is warmed through and slightly golden. 

Step 7: Assemble the dish

To assemble the dish, start by placing two grilled lamb kebabs on a serving plate. Arrange half of the Greek salad alongside the kebabs. Add one lightly toasted pita bread to the plate, either whole or cut into wedges for easy dipping. Finish the presentation by placing a generous tablespoon of Yo Dips Tzatziki yoghurt dip on the side, ready for scooping or drizzling over the kebabs.
