Creamy Garlic, Mushroom & Spinach Pasta

Method 

Step 1: Sauté the Aromatics

Heat 2 tablespoons of oil in a large saucepan over medium heat. Add 1 finely chopped onion and about 200g of sliced mushrooms. Fry for about 10 minutes, stirring occasionally, until the vegetables are softened and lightly browned.

Step 2: Cook the Pasta

While the onion and mushrooms are cooking, bring a large pot of water to a boil. Add your pasta (about 300g or as needed) and cook according to the packet instructions until al dente. Drain and set aside, reserving 25ml of the pasta water. 

Step 3: Make the Yo Dips Garlic Yoghurt Sauce

In a small bowl, add the Yo Dips garlic sachet to 200g of Greek yoghurt. Mix well until smooth and fully combined. Set aside until ready to use.

Step 4: Combine The Sauce

Reduce the heat to low and tip in the Yo Dips garlic sauce and parmesan, stir to combine, then add the spinach and set aside. 

Step 5: Finish the Pasta

Drain the pasta, reserving 25ml of the cooking water. Add the pasta to the pan with the creamy garlic-mushroom sauce. Toss everything together until well-coated. Return the pan to a low heat and cook for about 5 minutes, until the spinach is fully wilted and the sauce is heated through. If the sauce is too thick, stir in a splash of the reserved pasta water to loosen it to your desired consistency.

Step 6: Garnish and Serve

Season the pasta with freshly ground black pepper to taste. Serve hot, garnished with chopped fresh parsley and a sprinkle of grated Parmesan cheese.
